Welcome to ROOKIES COOKING CLASS!!! Are you SOO excited?!? We are going to have a BLAST!

Our goal with this class is to learn about and try foods that your body LOVES! Foods that help you feel awesome and foods that taste awesome! Sounds great, right?

HERE IS THE VIDEO: the ADVENTURES OF JUNK FOOD DUDE story.

Your NEXT ASSIGMENT is to TRY one new fruit or one new vegetable. You can choose which one!

Below is a list of some of the foods in our area that are at their prime (meaning this is when they taste the BEST) and in season (meaning they are available) during late September and early October.

Seasonal Foods in Utah (Late September – Early October)

Fruits:

  • Apples: Crisp and juicy, perfect for snacking, baking, and salads. Varieties such as Honeycrisp and Gala are typically available.
  • Pears: Sweet and tender, ideal for fresh eating or adding to salads and desserts. Look for varieties like Bartlett and Bosc.
  • Plums: Juicy with a sweet-tart flavor, great for eating fresh, making jams, or adding to salads.
  • Peaches: Late-season varieties may still be available, offering a sweet and fragrant flavor, ideal for desserts and preserves.
  • Grapes: Sweet and refreshing, perfect for snacking or adding to salads.

Vegetables:

  • Green Beans: Crisp and tender, great for steaming, stir-frying, or adding to salads.
  • Zucchini: Versatile and mild, excellent for grilling, baking, or adding to casseroles.
  • Corn: Sweet and juicy, ideal for grilling, boiling, or adding to salads and salsas.
  • Carrots: Crunchy and sweet, perfect for snacking, roasting, or adding to soups and salads.
  • Beets: Earthy and sweet, great for roasting, boiling, or adding to salads.
  • Potatoes: Starchy and hearty, available in various types like russet, red, and fingerling. Ideal for baking, mashing, or roasting.
  • Sweet Potatoes: Sweet and nutritious, perfect for baking, roasting, or making into soups and casseroles.

Squash:

  • Butternut Squash: Sweet and nutty, great for roasting, soups, and purees.
  • Acorn Squash: Mildly sweet and slightly nutty, ideal for roasting or stuffing.

Leafy Greens:

  • Kale: Nutritious and hearty, ideal for salads, smoothies, or sautéing.
  • Spinach: Tender and versatile, great for salads, smoothies, or as a cooked side dish.
  • Swiss Chard: Colorful and flavorful, perfect for sautéing or adding to soups and stews.

Cruciferous Vegetables:

  • Broccoli: Crisp and nutritious, excellent for steaming, roasting, or adding to stir-fries.
  • Cauliflower: Mild and versatile, ideal for roasting, steaming, or making cauliflower rice.
  • Brussels Sprouts: Nutty and sweet, great for roasting, sautéing, or adding to salads.

Other Vegetables:

  • Cabbage: Crisp and crunchy, perfect for salads, slaws, or stir-fries.
  • Radishes: Spicy and crunchy, ideal for salads or as a crunchy snack.
  • Turnips: Slightly spicy and earthy, great for roasting, boiling, or adding to soups.

Herbs:

  • Basil: Fresh and aromatic, perfect for adding to salads, pasta, or pesto.
  • Parsley: Mild and versatile, great for garnishing or adding to soups and salads.
  • Cilantro: Bright and fresh, ideal for salsas, salads, and Mexican dishes.
  • Thyme: Earthy and savory, perfect for roasting vegetables or adding to soups and stews.
  • Rosemary: Fragrant and robust, excellent for seasoning meats, potatoes, and bread.
  • Mint: Refreshing and aromatic, perfect for teas, salads, or garnishing dishes.

Your THIRD ASSIGNMENT is to make a recipe at home using one or more of the foods in the above list, or other foods that your mother has approved.

You are welcome to find your own recipe(s) OR USE THIS LINK for recipe ideas! You can print the pages and put them in your ROOKIES COOKING folder, WHICH YOU WILL RECEIVE IN CLASS, to refer to later and to get started on a GREAT collection of your own favorite recipes!

Be prepared to tell us which recipe you choose and what your experience was like trying it.

Your FOURTH ASSIGNMENT and last thing you need to do is:

You will need to prepare a short presentation.

Pick one fruit or veggie or herb from the list that you would like to learn about it and find a creative way to share what you have learned with the class. It could be a poster, or a song, or an art project, a video or you could bring that food to share… the sky is the limit!
